Fresh-cut fries with Parmesan and garlic served with a three cheese fondue with truffle oil

With blue cheese, marinated tomatoes, roasted garlic vinaigrette

Chicken Medallions
Marinated grilled chicken breasts on a bed of red quinoa prepared with feta cheese, cucumbers and kale tabbouleh prepared with herb oil in a balsamic reduction

Served with a glass of Jackhammer Pinot Noir

Bruschetta
Marinated tomato, reggiano, melted mozzarella, prosciutto, basil oil, and paprika oil, on char-grilled baguette

Blue Cheese Sliders
Angus beef with bleu cheese, bacon, fried shallots and a red wine demi glace

Garlic Shrimp
Saturated and sauteed in roasted garlic and olive oil, served with toast points for dipping

Question: How long have you been a chef?
Answer: 5 years

Question: Who or what inspired you to become a chef?
Answer: It’s in my blood my Grandfather started a very famous Italian restaurant "Villa Nova" and I was literally raised in the place. The only jobs I have held since I was 16 have been in the restaurant industry.

Question: What do you enjoy most about your profession?
Answer: The balance of artistic creativity and business skills that it takes to be a chef.  The joy I see and feel from our patrons after they have dined at Sea Legs.  It really makes work not feel like work, when you love what you do.

Question: When you’re not in the kitchen what are you doing?
Answer: Living a good life in Newport Beach!

Question: What is your most popular dish?
Answer: Pig & Fig Flatbread and Ahi Tar Tar

Question: Your last meal on Earth would be??
Answer: Porchetta

Answer:  The Stinky Fries I’m a sucker for French fries and cheese
