Question:
How long have you been a chef?
Answer: started culinary school in 1993, graduated beginning of 1995…17 + years

Question: How long have you been at this restaurant?
Answer:  5 days!

Question: Who or what inspired you to become a chef?
Answer: grandmother and mom, because food was such an important part to our family.  They cooked all kinds of cuisines.

Question: What do you enjoy most about your profession?
Answer: the comradery, the team work, and also the teaching.  It is always nice when someone eats something of yours and they enjoy it. 

Question: When you’re not in the kitchen what are you doing?
Answer: I enjoy golfing…but with my family being so young, I spend most of my time with my two daughters and wife. 

Question: What is your most popular dish?
Answer: from past experiences, my scallop dish was always received well…but I’m looking forward to doing a savory soufflé here at the palm terrace that I think will be a hit. 

Question: Your last meal on Earth would be??
Answer: Fried Chicken, or an awesome cheese burger and fries. 

Question: What's your favorite item on the Restaurant Week Menu?
Answer: Short ribs

Answer: working in different kitchens as a cook and see all the top chefs on magazines.

Question: What do you enjoy most about your profession?
Answer: create new dishes and be able to play with food

Question: When you’re not in the kitchen what are you doing?
Answer: take care of my kids (4) and watch professional soccer

Question: What is your most popular dish?
Answer: Slow Poached Lobster  with Wild Mushroom Risotto and lobster Glace

Question: Your last meal on Earth would be??
Answer: Fried Calamari with Shishito Peppers and lime sauce

Question: What's your favorite item on the Restaurant Week Menu?
Answer: Pan Seared Scottish Salmon with Shisho Risotto and Soy Beurre Blanc
