Question: How long have you been a chef?
Answer: 12 years
 
Question: How long have you been at this restaurant?
Answer: 7 years
 
Question: Who or what inspired you to become a chef?
Answer: What inspired me to become a chef is knowing that I am able to make anything I can imagine with food.
 

Question: What do you enjoy most about your profession?
Answer: Knowing that the menu ideas are endless and I can create anything.   I also enjoy walking the floor, meeting new customers and watching them enjoy the food I create. 
 
Question: When you’re not in the kitchen what are you doing?
Answer: I enjoy relaxing and spending time with my kids.  
 
Question: What is your most popular dish?
Answer: The Chipotle Citrus Skirt Steak.  We marinate the steak in blend of citrus juices and spices and then we grill it to perfection.   The skirt steak is super juicy and tender and we serve it with rice, tortillas, lettuce, pico de gallo, and a cup of soup or a salad.  We introduced this entrée about 2 years ago.  It is a local favorite!
 
Question: Your last meal on Earth would be??
Answer: This a tough question but I think I would have a lemon garlic salmon with chipotle mash potatoes. 
 
Question: What's your favorite item on the Restaurant Week Menu?
Answer:  The Grilled Mahi Burrito offered at the Rancho Santa Margarita location.  The signature chipotle sauce mixed with the grilled Mahi and fresh avocados and pico de gallo is tasty.  Guests can select that item, plus guacamole as an appetizer, key lime ice cream pie for dessert and wash it down with a Tres Sietes Tequila hand crafted Margarita for only $30!  It’s a lot of food and a really good value!
